

SWEET'N'SOUR EDAMAME
1 cups Vegetable broth
1 Tbsp. Tomato paste
1 Tbsp. Tamari
2 Tbsp. Honey
2 Tbsp. Rice Vinegar
1 Tbsp. freshly grated Ginger
4 cloves garlic, minced
1 scallion, sliced thinly
16 oz. bag of Seapoint Farms Shelled Edamame
Combine first 8 ingredients in a saucepan and bring to a boil. Place the frozen Seapoint Farms Shelled Edamame into saucepan. Bring back to a boil for additional 5 minutes. Serve warm..ENJOY!
EDAMAME FRIED RICE
1 ½ cups of Seapoint Farms Shelled Edamame
4 cups cooked rice (white or brown, whichever your prefer)
4 Tablespoons vegetable oil
2 Tablespoons diced onion
2 Tablespoons diced celery
2 Tablespoons diced red bell pepper
¼ cup tamari sauce
2 eggs, beaten
In a large skillet sauté diced onions, celery and red bell peppers in vegetable oil until tender. Add the edamame and continue to cook on low heat for 1 minute. Add cooked rice and tamari sauce. Make a well in the center of skillet, pour 2 beaten eggs into the center and stir until fully scrambled. Mix all ingredients together in skillet. ENJOY!
